Victorian Spiced Beef.

    3lb Silverside or Topside Of Beef.

    ½ tsp Ground Cloves
    ½ tsp Ground Nutmeg(Freshly grated is best)
    ½ tsp Ground Allspice
    2 tbsp Brown Sugar
    Pinch of Thyme
    Ground Pepper
    Crushed Bay leaf
    1 Finely Chopped Onion
    8 oz Salt
    1tbsp Saltpeter

    Mix well and rub into Beef(1)

    Leave for 2 days

    Then pour over 1/2 tbsp treacle and rub in with the mixture

    Repeat DAILY for One WEEK(Use only the mixture in the dish)

    Tie with string

    Cover with warm water

    Simmer gently for 3 hours


    (1)You can, of course, scale this this for different weights, or vary the spice qty to taste
