Oleoresin is just senseless heat. It's the stuff they use in pepper spray and commercially produced ginger beer.

The achaar and curry looks good but a couple of birds eye for heat and roundness and a habanero for sweetness along with lime, fenugreek and garlic/tomato might give more character.

To be fair - whatever was in that jar of Achari had everything it needed for taste. and it did indeed taste amazing.

I always visit Aagrah restaurants when I'm up North and these jars they sell really do mimic their signature dishes very well indeed.

I'm a Griller not a Chef, so I'll mostly use a Rub / Sauce where I can.

I totally agree with your recommended ingredients, however the Oleoresin gave this a great tasting kick and rest of the great taste and character was in the jar.
 
If it's anything like achaar, just that on a slice of buttered wholewheat or seed bread with sharp cheddar is ambrosia. Green mango is good, veg is not bad, but the curried chilis are lush.

They do veg and green mango achaar in small tubs at corner shops in SA, and it's a staple for labourers with a half loaf for lunch. Rip out chunk of bread, chuck in tub of achaar and scoff like bunny chow.

The current mrs_mush wanted just a roast chicken breast and veg for supper. It was £3.40 for two breasts, or £2.13 for a small chicken. Bit of a no brainer and I've got a brace of cooked legs for my lunch tomorrow and a small carcass which has made a chicken and veg soup portion that I'll have for lunch next week.
 
Chicken Chassu Chaseu Chausue Stew with herbs and mash, forgot to take piccy before I scarfed it but needed food, it has been b@rstard freezing today with a lazy wind...

Not mine (well, my portion of) - the sprogette's - pashwari naan that she made from scratch and some kitchen ingredients. The sprog had fly-less naan as he is a wimp.
