Fascinated by the dish. Does it have a name and what is the fuel?
It's called assadour de choriço. It's Portuguese: just make sure you get one for €5 from the local hardware store and not €20 from the tourist tat shop (no prizes for guessing where they get them from...)

Fuel is isopropyl alcohol. I find 80ml cooks it to perfection.

The trick is to score the chouriço on both sides (without chopping it through) otherwise you burn the outside and the inside doesn't get warm.

Once the alcohol burns off it cooks in its own fat at the end.

Tonight I have mainly been eating Korean tacos. Kimchi drought solved by stirring sriracha into sauerkraut.
