I've a recipe book somewhere from my student days for beef bourguignon using cheap stewing steak or shin. It says to blot the fat from the surface with a couple of slices off a baguette and then fry in some extra olive oil with crushed clove of garlic to make croutons.And the fried bread.
ETA If you are making savoury mince with butchers mince, blot the fat up from the surface with a slice of bread, fry it up to have with the mince.
