That's pretty much the one I used with variations;
Used cheap red wine
Added a tablespoon of tomato puree
Added a chopped onion
Didn't have the required herbs, substitutes with some herbs de Provence
Didn't need any flour
Prepped and cooked in one day, no overnight marinating
Removed the star anise 1/2 way through as it was quite a pronounced taste
Used my Oxo separator to remove the fat
Removed and shredded the meat, blended the stock and veg and added the meat back in.
Drank the rest of the wine whilst it was cooking
Opened the good stuff to serve with the soup.
