The Taxman should be all over then like a rash. Cash in hand businesses feed into the Tax Gap (the difference between the estimated tax that should be collected and the actual tax collected).
The Tax Gap is about 5-7% of potential tax collection which is a huge about of money.
We need more tax collectors, more police and the will to collect tax and prosecute tax evasion.

Then you need some to do it, because at this point in time, thanks to the Blair regime we are limited to the honesty of traders and formulaic declarations and the button pushers. People like me were got shot of or repurposed. HMRC is IR writ large and they have always been somewhat different in mentality. And we all know the fear or favour issue largely tamped down by institutionalised don't look now cronyism that makes a mockery of Apoliticism. And yep, you will have to pay them a living wage and that's going to come from the public purse. But then we're having to pay for the expanded NHS too. It's odd, not really, but a lot of these places are cash-only if you order over the counter but have a thriving online delivery service. Local authoritiea should get off their knees and physically get in there and see the scam that a lot of these places are.Cash in hand does not automatically mean £5 errors.

France also reduced visas from Morocco by 50%, and it was openly admitted then that it was giving their government sleepless nights should it go Pete Tong.
With 2,000 kms of Med coastline it should.
