I still think the thread title should be changed to "Threats to shipping in the Gulf"...

Question for clever people like @Archimedes, @jrwlynch, @Magic_Mushroom and others. When the United States (and others) deployed carriers to the Arabian Gulf during the tanker war, was there a specific thought that the presence of the F-14 Tomcat (and the F/A-18 Hornet) would discourage Iranian and Iraqi air attacks against shipping?

As the paper by Cordesman (I think it was a book chapter actually) shows, lots of ships were attacked by aircraft, including helicopters (armed with anti armour weapons?).

Bad form to answer my own question and to quote myself, I know, but a quick Google search suggests there were encounters between US Navy Tomcats and Iranian Phantoms and P-3s:

From page 33.On August 8, two U.S. F-14s from the carrier Constellation encountered an Iranian F-4 which refused to be warned off and appeared to be closing on a U.S. Navy P-3C patrol plane. The Iranian fighter closed to within threatening range of the P-3C, in spite of the fact the F-14s were closing directly on the Iranian fighter and issued a steady series of warnings. One F-14A then fired an AIM-7F missile whose motor failed to ignite. It then fired an AIM-7M missile which appeared to track the target but which was
fired at the limit of its minimum range
....

Where there any other encounters? Did the presence of carrierborne fighters Iranian or Iraqi air attacks against shipping?

From what I can remember, there were several instances where Iranian fighters were chased off/escorted. The Iranians weren't unduly put off by the American presence, it would seem, but whether it put off attacks gets into the realms of proving a negative. The Iranian MO preferred IRGC mining operations, etc over air attacks, of course.

The incident in which weapons were released is rather confused - other accounts (including one from one of the F-14 pilots) suggest that the F-14s turned away after launching their weapons and didn't see whether they hit anything; some suggest that there wasn't anything there in the first place and that phantom radar returns led to the launching of weapons and another set of sources holds that a C-130 was there (and they disagree over whether it was shot down or not).

Of all the countries in NATO, Germany is the one Russia talk with most and Germany buys their oil and gas ie overland from Russia, not from the ME. There is no advantage to Germany to expend resources they don't have...

I think it was jonesy who said that Europe is prepared to fight to the last American. There is of course the minor detail that the German forces have a somewhat limited capability, to put it mildly.
