Should I, or shouldn’t I? Walking the UK coast.

Why not just do a series of shorter walks, building up distance if your knee holds out (Hadrians wall walk, West Highland way, Cleveland way, Coast to Coast,)? Those are a few days to a couple of weeks walking, and all with easy transport if you get broken part way through.
They could be used as training walks if you do want to do the round UK route

It seems a big step (sorry) to go from nothing to several thousand miles with a gammy leg.

You could get one of them „IKEA“ sofa testing machines, connect it to your leg and see what „occurs!“. But, You need to have a steady internet connection for Deliveroo and nappies.
