My favourite pasta has always been with a Carbonara sauce.... it just got better.

Per person

140- 150 gms of spaghetti, (wholewheat tastes best).

2 rashers of your favourite bacon/ pancetta, chopped.

A little garlic.

1 egg per person.

Cream or creme fraiche ( lasts longer in the fridge), roughly a similar volume to the egg.

Fresh or freeze dried parsley, just for colour.

Good parmesan (Aldi is best)

Dried Porcini mushrooms.

Take about a heaped tablespoon of finely shredded mushrooms for 2 people, put in a bowl and add just enough boiling water to cover, and soak.

Boil salted water and add pasta.

After about 4 minutes, pour a little oil into another saucepan, add the garlic and bacon and fry over a medium heat.

After another 4 minutes, the pasta should be cooked, also the bacon.

Turn off the heat, add the drained pasta to the bacon and stir.

Add the mushrooms, then the beaten egg, cream and parsley.

Add a little at a time to the warmed bowls so everyone gets plenty of bacon etc from the bottom of the pan.

Add parmesan and black pepper to taste OMFG.
