Basically subnetting is the use of a subnet mask which cancels out all but the 'subnet' address.

In basis subnetting is the art of extending the available range of IP addresses available, without subnetting we would have run out of IP addresses in about 1995.

You decide what size of network you wish to run under an IP address (and what type) and split the address accordingly by using a subnet mask.
