Chicken, Guacamole & Tortillas... any Suggestions?

The heart of the site is the forum area, including:

  1. Okay, the other half brought back a jar of Guacamole, chicken breasts and some tortillas expecting me to come up with some Cordon Bleu, Michelin Star arrangement!

    Any ideas?

  2. Depends if we have any store cupboard ingredients. With your list I would slice chicken into strips and fry off, smear torillas in guacamole and make wraps with chicken.

    With a bit of tomato sauce and cheese, would fry chicken as before then with a dry fry pan, spread tortilla with tomato sauce and sprinkle with cheese, then cooked chicken then another tortilla in hot pan and toast on each side until cheese has melted, you can make this double or triple etc.

  3. Fry an onion, a couple of chillies and a clove of garlic in olive oil.

    Add tin of chopped tomatoes, simmer for 5 mins.

    In a large bowl, put chopped cooked chicken, handful of grated cheese and 4-5 tablespoons of tomato sauce. Mix well.

    Place tortilla into tomato sauce and allow tortilla to soak up some of the sauce. Remove, put on plate, sauce side down.

    Put couple of tablespoons of chicken mixture onto tortilla and roll into thick cigar shape.

    Place in flat overproof dish.

    Repeat until all tortillas and/or all chicken mix used.

    Pour remaining tomato sauce mix over tortillas.

    Sprinkle with more grated chees.

    Over gas mark 4, 20 -25 mins.

    Het presto - enchilladas. Serve with guacamole, salad and crusty bread.
  4. Thanks thebutlerdidit... that sounds like 'the dogs machenders' nice touch with the toasting of the tortillas in the pan to melt the cheese... :wink:

    Cut a few Tortillas into wedges,deep fry till crisp & dust with black pepper & salt.Home made tortilla chips!
