Was given a Levi Roots recipe book a few years ago, used a fair few time.
 
No French influence?

Yes there were french there too, a real melting pot

You can see by a lot of the recipes. that the poor had to make do with some pretty unlikely food, I had a snout and trotter souse in Barbados, with lava hot steamed sweet potato pudding a few times.

Delicious, but the locals laughed at me for leaving the more unsavoury looking bits.
