Pheasnt carcase?
Having removed the breasts,I'm looking at the carcase.Normally I throw it away.What else could I do with it? Obvious thing is soup/stock but any other more exciting suggestions? seems such a waste.
PS I once tried to confit the legs - disaster!Older,but no wiser.

Don't dismiss the stock idea, pheasant stock is great in onion soup.

Getting a pressure cooker is great for stock. Birds and bones simly melt in 'em. Highly recommended.
All we use the carcass for is stock and the bits go to Mrs. Fox who knows when stock is being made.- Si dubitas, fuge.
