Rick Stein -Far East travels Tea/Chai
Whilst watching Rick Steins latest cookery venture on BBC 2 or was it 1 ?Rick was travelling around India & the Far East sampling the food etc.
On his last programme he reffered to tea made in India made with loose tea, and spices and condensed milk.
I was lucky to be posted to Gib where we had Char wallahs, they made their tea with condensed milk which I enjoyed.
Rick did demonstrate how this tea was made but I wasn't quick enough to catch it.
As anyone got the recipe for this ?

It is called Masala tea or spice tea, there will be 1000's of recipies on the web, but it usually consists of ginger, cinnamon, cardamon and clove boiled with tea and condensed milk added to taste.
Personally I prefer the ginger tea that I had in Nepal

I suspect that 'aerating' (you know puttin' air in it, like) the tea might be important - makes for excellent tea quality. I quite like mint tea (Moroccan whisky) sometimes and you need to pour it between two cups/pots for a bit to get it to start tasting really good.

Quick Masala Tea
Ingredients:
Fennel seeds
Teabags
Sugar
Evaporated milk, or
Sweetened creamer
Method:
Grind some fennel seeds. Now add a pinch to each cup.
Place 1 or 2 teabags (according to how strong you like your tea). Add just boiled water. Cover and leave for a few minutes.
Add sugar and evaporated milk or sweetened creamer as desired. Enjoy
