I've not had better mussels in wine sauce than on the Dalmation Coast, Luverlly!!!
I always go with what Blueygirl suggested, sweat shallots, thow in dry white wine, boil for a minute, then stir in double cream, chopped parsley, sea salt and pepper. It couldn't be easier. No need for chicken stock in my view.
Bit late I know, as you cooked this a couple of days ago, but this is for the benefit of anyone else who might want to try moules mariniere cooked at home. Glad you enjoyed your meal though!

I had the best octopus on an island on the adriatic coast. Octopus, loads of olive oil, paprika roasted on a tray with potato, and fck loads of bread. Washed down with Rakija. They can cook!
Now I am hungry!
